I used to make this all the time when I was living by myself in Japan (and salmon was sooooooo cheap). It's such a great, quick, easy meal. Proper teriyaki is meant to be very simple and light. There are a lot of phoney teriyaki recipes out there, but this isn't one of them. If you're cooking for four, doubling the quantities doesn't work so well here, you end up with too much sauce. Try just increasing by half, or just add as you go and see how much you need. As long as you keep adding 1 tablespoon soy sauce, 1 tablespoon mirin, 1 tablespoon sake one after the other it'll be fine.
